Gluten-Free Granola


Whether you’re looking for an energy-packed way to start your day, or a mid-afternoon snack to help you get through the three o’clock slump, this gluten-free granola is the way to go. Jam-packed with nuts and seeds, this recipe will give you a nutritious energy boost, helping you power through your day.

Ingredients:

  • 1 cup of the following (you can find these at most bulk food stores):

  • Chopped pecans

  • Sliced almonds

  • Slivered almonds

  • Pumpkin seeds

  • Sunflower seeds

  • Shredded unsweetened coconut

  • 1/4 cup of butter (I substituted coconut oil for the butter)

  • 1/4 cup of honey (I used slightly less than 1/4 cup of raw honey which I purchased in St Jacobs)

  • 1 tsp of cinnamon

  • 1/4 tsp of nutmeg

  • 1/8 tsp of ground cloves

Directions:

  1. Preheat the oven to 325 degrees Fahrenheit

  2. Combine the dry ingredients in a large bowl

  3. Melt the butter in a pan over low heat and slowly stir in the honey

  4. Pour the liquid ingredients over the nut mixture and mix well

  5. Spread the contents over a large cookie sheet lined with parchment paper

  6. Bake for approximately 25 to 30 minutes, stirring after the first 15 minutes to avoid burning

  7. Allow granola to cool completely then store in airtight containers
